  • 1/4 cup broccoli, finely chopped or grated
  • 1 tbsp onion, finely chopped

  • 1/2 tsp fresh coriander, chopped
  • 1/2 tsp fresh mint leaves, chopped
  • Green chilies to taste, finely chopped
  • 1/4 tsp garam masala (optional)
  • 1/2 tsp ginger-garlic paste
  • 1 tbsp organic besan (gram flour) (for binding)
  • Salt to taste

Instructions:

  1. Prepare the Vegetables:
    Steam or lightly cook the chopped broccoli, carrot, and onion until they are soft. Once cooked, mash them well in a mixing bowl.
  2. Mix Ingredients:
    Add the chopped tomato, coriander, mint leaves, and green chilies to the mashed vegetables. Then, stir in the ginger-garlic paste, turmeric, garam masala (if using), and salt. Mix until all ingredients are well incorporated.
  3. Form the Cutlets:
    Gradually add the besan to the mixture, combining it until a dough-like consistency forms. If the mixture is too dry, you can sprinkle a little water for better binding. Shape the mixture into small, round cutlets.
  4. Cook the Cutlets:
    Heat a non-stick pan with minimal oil and shallow fry the cutlets until they are golden brown on both sides. Alternatively, you can cook them in an air fryer for a healthier option.
